Ready to take your sourdough game to the next level? If you are already baking at home but want to deep dive into the science, troubleshoot your crumb, and master the art of the ferment, this class is for you. 
No beginner tutorials here. We are skipping the basics and going straight to the core of advanced sourdough craft—all while sharing a sourdough pizza dinner inside the bakery.


What We Will Tackle

  • Crumb Analysis: Decode your open vs. tight crumb structures.
  • Fermentation Control: Master retarding your dough, understand timing of add -ins or how to create more or less crust.

What to Bring

  • Your Starter: Bring a jar of your live culture for a health check.
  • Bread Gallery: Load your phone with photos of your loaves, crumbs, and scoring attempts.
  • Your Burning Questions: No question is too nerdy for this session.
